Olive Oil Special Report
Your “Olive Oil” May Be Poisoning You…
Most “Extra Virgin” Olive Oil is Not Even Olive Oil
You buy “extra virgin” olive oil because you believe it’s healthy.
69% of the time, you could be buying something else.
Something that is “rancid, fusty and musty.”
Something that could be mostly soybean oil or peanut oil or canola oil or sunflower oil or any of a number of other cheaper oils.
In the well researched book Extra Virginity, The Sublime and Scandalous World of Olive Oil, author Tom Mueller points out that 69% of olive oil that is labeled “extra virgin” is not olive oil at all.
69% of Olive Oils Had…Flaws
“A recent survey of supermarket extra virgins performed by the UC Davis Olive Center, in cooperation with the Australian Oil Research Laboratory, revealed that 69 percent of oils tested had taste flaws such as rancid, fusty, and musty, which meant that they weren’t extra virgin oils at all, and had been mislabeled…similar findings were reached by Andreas Maerz in Germany, by CHOICE magazine in Australia, by the regional government of Andalucia, and by documentaries in Swiss and German television about extra virgin quality in those countries…Paul Vossen, a University of California oil specialist (says)…’I would say very seldom do we ever find one that passes as extra virgin…price is by no means an indicator of quality…The high-ticket items can be equally bad.’…
Market Awash in Counterfeit Oils
Mike Bradley concludes that ‘the market is awash in counterfeit olive oil to the point that most legitimate sellers have given up trying to sell the real thing to wholesale suppliers or restaurants. It is rare to find authentic extra virgin olive oil…even in fine restaurants that ought to know better. It’s nearly impossible in some localities…’”
More Money in Adulterating Olive Oil Than (there was) in Bootlegging
From Mueller’s book again:
“there is more profit in adulterating olive oil than there is in bootlegging. The practice of adulterating this oil has grown until it has become a menace to the honest importers in the trade.” –US Health Commissioner Royal S. Copeland speaking in 1922, two years into prohibition.
Systematic Corruption of the Olive Oil Market Continues to This Day
Over a number of years, Mueller’s research for the book took him all over the olive oil world, to Italy, Spain, Greece, and to the new world producers in California, South America and Australia.
What he found was a systematically corrupt network of growers, manufacturers, suppliers and retailers that has made the term “extra virgin” useless. Even the term “organic” is no guarantee that you and I are getting the real deal.
Good News: Healthy Olive Oil IS Available
There is a strong and vibrant movement underway of growers and retailers who care about the quality of the olive oil they produce and sell.
It IS possible to buy real olive oil and receive the anti oxidant and anti inflammatory qualities olive oil is recognized for.
The Bad News: Good Olive Oil Stings
“If an oil doesn’t sting at the back of the throat, it contains little or no oleocanthol.” (my bolding) If you are used to bland olive oils, the real deal may take some getting used to. The substances that give rise to the health benefits make olive oil bitter and sting at the back of the throat. If it stings to the point of coughing, even better.
More Good News: The Health Benefits are Awesome
From Mueller’s book again:
“ ‘A low incidence of cardiovascular disease, dementia, and certain kinds of cancer (my bolding)—these are among the central benefits attributed to the Mediterranean diet,’ says Gary Beauchamp. ‘Since the 1950s, people have accepted that olive oil, the main source of fat in this diet, is the keystone of the dietary regime.’ Some of olive oil’s positive effects stem from its monounsaturated fat profile, but, more and more, medical research suggests that the polyphenols and the other ‘minor components’ of olive oil, which constitute a scant 2 percent of its volume, are the main source of oil’s health benefits. These same substances give a high-quality olive oil its pepperiness, bitterness, and other prized sensory properties; in fact, the oil’s healthful benefits are directly proportional to the strength of its flavors, aromas, and other sensory characteristics. If an oil doesn’t sting at the back of the throat, it contains little or no oleocanthol. if it isn’t bitter, it’s low in tocopherol and squalene. If it isn’t velvety in texture, then it’s missing hydroxytyrosol.”

· California Olive Ranch – good fresh extra virgin olive oil, mainly from the arbequina and arbosana cultivars, grown in super high density groves in northern California. Available at a wide range of stores throughout the US (see the store locator). Note that their Limited Reserve is the highest-quality oil, unfiltered and from olives picked during the first 2 weeks of harvest (reviewed here). “Everyday” is the company’s best-seller, with a flexible flavor profile. Arbequina, Arbosana, and Miller’s Blend oils, part of the company’s “gold medal series,” have actually won more medals in olive oil competitions than COR’s other oils, thanks to their distinct flavor profiles.
· Cobram Estate – extra virgin olive oil from a range of cultivars, grown in Australia with the medium high density agronomic model, which has won olive oil competitions including best of show at the 2011 Los Angeles County Fair. Available here:
o USA:

§ Raley’s and Save Mart in northern California
§ Fairway in New York
§ QFC and Haggen in Seattle
§ King Soopers in Denver
o Canada:
§ IGA stores in Vancouver
· Corto Olive – good, fresh super-high-density arbequina oil available at Costco (occasionally), HEB, Zabar’s under the Zabar’s label, Kroger as a specialty label called “Private Selection.” I profile Dino Cortopassi, founder of the company, in Extra Virginity.
· Costco Kirkland Toscano – Kirkland is the Costco store brand. I’ve been disappointed by Kirkland Organic EVO (not to mention the “extra virgins” in multi-liter plastic jugs), but the Toscano signature oil is the real deal.
· Lucini – a wide range of fine oils, led by the top-of-the-line Limited Reserve Premium Select oil. I quibble with the clear glass bottles, which impair the shelf life, but as long as the oil is fresh it’s first-rate, and is widely available across North America. See the store locator. Lucini Premium Select is their finest oil, made on a a single estate near Bolgheri, in the Maremma region of Tuscany. Their Estate Select oil is made from olives grown in various estates in central Italy; since it’s sourced from a wider group of farmers, it costs less.
· Oleoestepa – just entering the US retail market, this Spanish cooperative produces excellent oils at competitive prices. Keep an eye out for their oils arriving in shelves near you soon!
· O-Live – available at stores across Canada, and in selected US stores (including HEB in Texas). See the store locator (which sources tell me isn’t always 100% reliable).
· Ottavio and Omaggio – in terms of value for money, I don’t know better oils than Ottavio and Omaggio: a fine balance of fruit, pungency, bitterness that will appeal to a wide audience, at rock-bottom prices. Ottavio is available at HEB and Central Market, and Omaggio is available at Sam’s Club. (Note: In the past, Valco Enterprises, producer of Ottavio, and Axiom Enterprises, producer of Omaggio, have both supported Truth in Olive Oil. Read here for what this means.)
· Trader Joe’s – 3 out of the 6 extra virgin oils I tasted in August, 2013 were the real deal. One of these, the Premium 100% Greek Kalamata, was very fresh, spicy, complex at an extremely competitive price (1 liter for $8.99). The California Estate Olive Oil was also a good choice, while the Premium Extra Virgin was decent and defect-free, if a bit uninspiring. The 3 other Trader Joe’s “extra virgins” I tasted were defective. (See here for details.)
· Whole Foods California 365 – The Whole Foods store brand from California is good-quality extra virgin olive oil at a great price. In my experience, the other members of the 365 lineup are poor – an odd situation from a company like Whole Foods that preaches quality über alles.
As mentioned above, there are likely to be many more good supermarket oils not included in this list. Please suggest some, and I’ll try them out as soon as I can.”

Disappointment AND Excitement
Corruption of the olive oil market is disappointing. I felt like the carpet was being pulled from under me as I read Mueller’s book. At the same time, it is inspiring to hear of the many producers whose hearts are in the right place. It means that you and I, armed with this new information, can go out and get the real stuff. We can throw out the old and start getting some of the benefits of the Mediterranean diet.
Olive Oil is Anti-Inflammatory AND Anti-Oxidant
As you may know, inflammation is said to be at the root of all dis-ease. Olive oil is anti-inflammatory.
The “bad cholesterol” is only bad if it is oxidized. (My doctor, James Houston here in Victoria, agreed with me when I told him that). Olive oil, the real deal good stuff, is an anti-oxidant,
So good olive oil may protect against all dis-ease and against the effects of the ‘bad’ cholesterol.
Your Mission Should You Decide to Accept
If your current olive oil doesn’t have that pepperiness at the back of the throat, it doesn’t have the oleocanthol.
If your current olive oil isn’t bitter, it’s low in other healthy ingredients, namely tocopherol and squalene.
And if it isn’t velvety in texture, that indicates there is no hydroxytyrosol in the oil.
And if it has none of those, it may not be olive oil at all but any of a number of unhealthy and damaging vegetable oils.
Is it time to throw it out then and find a source for the real stuff?
I will leave it to your good judgement.
Love, Laughter and Smiles.
Matti Anttila
P.S. Good olive oil is “worth its weight in gold” as the saying goes. In my opinion, it is far more worthy than gold. Good health and great energy far outweigh material riches. You can always make money IF you have your health and your energy. But if you don’t have your health, money means nothing.
Therefore, I choose to pay the price for the real stuff. You wouldn’t put 50 octane gasoline into your car. Why would you put “50 octane or less” fuel into your body? Throw out the old stuff and get the real deal. You and your body deserve it.
If you are in Victoria, a great source is “Olive the Senses.” http://olivethesenses.com They are in The Hudson at 1701 Douglas Street. 250.882.4210.

Bonus Report #1: World Without Cancer
Read about the discovery of the cause of and cure for cancer, as detailed in G. Edward Griffin’s book World Without Cancer. This report empowers you with the information you need to help prevent cancer in your life and the lives of your family members. How NOT to be the one out of three that is forecast to develop cancer over a lifetime.
SPECIAL REPORT: WORLD WITHOUT CANCER
Cancer is a nutritional deficiency.
Just as scurvy is easily avoided by ensuring adequate vitamin C consumption, so cancer is just as easily avoided by ensuring an adequate supply of vitamin B-17.
This is the theme of a book by G. Edward Griffin.
Disclaimer: This article is authored by an independent researcher, not a doctor. This is presented for information purposes only, not medical advice. You are advised to take responsibility for your own health, decisions and treatment by seeking the advice and/or supervision of qualified health-care professionals who are specialists in their field.
“With billion of dollars spent each year on research, with other billions taken in on the sale of cancer-related drugs, and with fund-raising at an all-time high, there are now more people making a living from cancer than dying from it. (Italics and bolding mine) If the solution should be found in a simple vitamin, this gigantic industry could be wiped out overnight. The result is that the politics of cancer therapy is more complicated than the science.
WORLD WITHOUT CANCER blazes the trail into unexplored territory and reveals how science has been subverted to protect entrenched commercial interests. It delivers the kind of impact that could topple an empire; and perhaps it will.”
–from WORLD WITHOUT CANCER by G. Edward Griffin.
More from the book:
“The purpose of this book is to marshal the evidence that cancer is a nutritional deficiency disease. It is not caused by a bacterium, virus or mysterious toxin but by the absence of a substance that modern man has removed from his diet. If that analysis is correct, then the cure and prevention of cancer is simple. All that needs to be done is to restore that easily obtained and inexpensive food factor to our daily meals.”
That substance is Laetrile, a naturally occurring substance found in abundance in the seeds of apricots and also in apple seeds.
If this were true, “… it would also mean that the million-or-so professionals now gainfully employed in the cancer-research, cancer-therapy, and fund raising industries would rapidly be out of work…It should not be surprising that these experts have rejected the vitamin-deficiency concept of cancer. There is nothing in it for them. Not only would a world without cancer lead to pay-check shock, it also would represent a blow to professional prestige. Imagine: a cure for cancer found in the seeds of fruits, not in research laboratories, and discovered by people without government grants or prestigious diplomas hanging on their walls!”
Griffin claims that the process used by the Food and Drug Administration in the US (FDA) to approve therapies is part of the problem.
“The testing protocols established by the FDA are costly….(and) can take years and consume over two-hundred-million dollars per study.
Only the large pharmaceutical companies can play that game…Substances found in nature cannot be patented: only those which are invented by man…
Therefore—and mark this well—as long as the present laws remain, the only substances what ever will be ‘approved’ for cancer therapy will be proprietary. No substance from nature will ever be legally available for cancer of any other disease unless its source can be monopolized or its processing can be patented. No matter how safe and effective it may be, and no matter how many people are benefited, it will forever be relegated to the category of ‘unproven’ therapies. As such, freely available cures from nature will always be illegal to prescribe, to promote, and in many cases, even to use.”
“For five years, between 1972 and 1977, Laetrile was meticulously tested at Sloan-Kettering (Institute, one of the premier research facilities in the world) under the direction of Dr. Kanematsu Sugiura. As the senior laboratory researcher there, with over 60 years of experience, Dr. Sugiura had earned the highest respect for his knowledge and integrity…
Sugiura broke his experiments down into a series of tests using different types of laboratory animals and different tumors: some transplanted and some naturally occurring. At the conclusion of his experiment, he reported five results: (1) Laetrile stopped metastasis (the spreading of cancer) in mice, (2) it improved their general health, (3) it inhibited the growth of small tumors, (4) it provided relief from pain, and (5) it acted as a cancer prevention.”
Griffin looks at the research and also at cultures around the world that are cancer free, analyzing their native foods.
He concludes that the seeds of apricots have a substance that prevents cancer as do the seeds of apples. He also looks at the contention that these seeds contain cyanide and details the campaign to discredit Laetrile based on faulty science.
Case histories of terminal cancer patients who attribute their recovery to the effect of Laetrile are presented.
This book has done two things for me personally: First, it has erased any and all trace of fear about cancer. I have no more fear of getting cancer than I have of getting scurvy. Secondly, it has caused me to buy a whole bunch of organic apricots during the summer months, eat the flesh of the apricot, hammer on the pit until it reveals the seed inside. I then put those in a jar in the fridge and eat them throughout the year.
The book is well worth the read and is available from Edward Griffin’s website: http://www.realityzone.com/

Bonus Report #3: Teeth & Heart Disease
Is this the most important health book of the 20th Century? Nutrition and Physical Degeneration shows How to Heal Your Teeth and Your Body Through Ancient Dietary Wisdom.
Over 70 years ago, a Cleveland dentist traveled the world looking for societies with perfect teeth. He found 14 of them, looked at what was common among all of them and discovered the underlying principles of health and longevity. Report #3 provides the results of his research AND how to access this landmark work for free.
How to Heal Your Teeth and Your Body Through Ancient Dietary Wisdom
A Special Report on Nutrition and Physical Degeneration
Teeth with cavities are a standard part of life in our “civilization,” yet it was not always that way and it doesn’t have to be that way now!
Over 70 years ago, a Cleveland dentist traveled the world looking for societies with perfect teeth. He found them in isolated Swiss villages, windswept Scottish islands, Eskimos and Indians in North and South America, aborigines in Australia and New Zealand and tribes in Africa.
Dr Weston Price studied them to find out what they did and discovered ancient wisdom that not only preserved teeth, but health and longevity as well.
His landmark work Nutrition and Physical Degeneration traces how these civilizations also started to develop cavities and ill health once they started eating the modern “civilized” diet.
The diets of the healthy “primitives” were all different, but from his research, Price discovered that native diets had at least ten times the water-soluble vitamins (C and B complex) as the American diet. Further, the soaking, fermenting, sprouting and sour leavening made these nutrients more available to the body.
Price got a real surprise with the fat-soluble vitamins (A and D).
There were at least ten times these vitamins in the native diet than in the American diet!
These come only from animal fats: butter, lard, egg yolks, fish oils and organ meats.
Price also discovered another fat-soluble vitamin that was a more powerful catalyst for nutrient absorption than vitamins A and D.
He called it “Activator X.”
All the healthy groups had this X Factor in their diets, in fact, many of the groups considered the source foods sacred: cod liver oil, fish eggs, organ meats and the deep yellow Spring and Fall butter from cows eating rapidly growing green grass.
Price used the combination of high vitamin butter and cod liver oil to successfully treat osteoporosis, tooth decay, arthritis and rickets in children.
Saturated fats from animal sources form an important part of the cell membrane, protecting the immune system and helping the body to use essential fatty acids. Saturated fats are needed for the formation of the brain and nervous system. Some fats protect against pathogens in the intestinal tract. Others provide energy to the heart.
And then there is cholesterol, the substance we are told can contribute to heart disease.
Cholesterol is actually essential to brain development and nervous system of the infant. Mother’s milk has a lot of it.
Cholesterol is the body’s repair substance patching up damaged arteries. It’s also an antioxidant and has cancer protection properties.
Below, please find the dos and don’ts that Price discovered from studying ancient wisdom as well.
The Weston A. Price Food Guidelines
- Eat whole, natural foods.
- Eat only foods that will spoil, but eat them before they do.
- Eat naturally raised meat including fish, seafood, poultry, beef, lamb, game, organ meats and eggs.
- Eat whole, naturally produced milk products from pasture-fed cows, preferably raw and/or fermented, such as whole yogurt, cultured butter, whole cheeses and fresh and sour cream.
- Use only traditional fats and oils including butter and other animal fats, extra virgin olive oil, expeller expressed sesame and flax oil and the tropical oils—coconut and palm.
- Eat fresh fruits and vegetables, preferably organic, in salads and soups, or lightly steamed.
- Use whole grains and nuts that have been prepared by soaking, sprouting or sour leavening to neutralize phytic acid and other anti-nutrients.
- Include enzyme-enhanced lacto-fermented vegetables, fruits, beverages and condiments in your diet on a regular basis.
- Prepare homemade meat stocks from the bones of chicken, beef, lamb or fish and use liberally in soups and sauces.
- Use herb teas and coffee substitutes in moderation.
- Use filtered water for cooking and drinking.
- Use unrefined Celtic sea salt and a variety of herbs and spices for food interest and appetite stimulation.
- Make your own salad dressing using raw vinegar, extra virgin olive oil and expeller expressed flax oil.
- Use natural sweeteners in moderation, such as raw honey, maple syrup, dehydrated cane sugar juice and stevia powder.
- Use only unpasteurized wine or beer in strict moderation with meals.
- Cook only in stainless steel, cast iron, glass or good quality enamel.
- Use only natural supplements.
- Get plenty of sleep, exercise and natural light.
- Think positive thoughts and minimize stress.
- Practice forgiveness.
WestonAPriceFoodDangers
- Don’t eat commercially processed foods such as cookies, cakes, crackers, TV dinners, soft drinks, packaged sauce mixes, etc.
- Avoid all refined sweeteners such as sugar, dextrose, glucose and high fructose corn syrup.
- Avoid white flour, white flour products and white rice.
- Avoid all hydrogenated or partially hydrogenated fats and oils.
- Avoid all vegetable oils made from soy, corn, safflower, canola or cottonseed.
- Do not use polyunsaturated oils for cooking, sautéing or baking.
- Avoid fried foods.
- Do not practice strict vegetarianism (veganism); animal products provide vital nutrients not found in plant foods.
- Avoid products containing protein powders.
- Avoid pasteurized milk; do not consume low fat milk, skim milk, powdered milk or imitation milk products.
- Avoid battery-produced eggs and factory-farmed meats.
- Avoid highly processed luncheon meats and sausage containing MSG and other additives.
- Avoid rancid and improperly prepared seeds, nuts and grains found in granolas, quick rise breads and extruded breakfast cereals, as they block mineral absorption and cause intestinal distress.
- Avoid canned, sprayed, waxed, bioengineered or irradiated fruits and vegetables.
- Avoid artificial food additives, especially MSG, hydrolyzed vegetable protein and aspartame, which are neurotoxins. Most soups, sauce and broth mixes and commercial condiments contain MSG, even if not so labeled.
- Avoid caffeine-containing beverages such as coffee, tea and soft drinks. Avoid chocolate.
- Avoid aluminum-containing foods such as commercial salt, baking powder and antacids. Do not use aluminum cookware or aluminum-containing deodorants.
- Do not drink fluoridated water.
- Avoid synthetic vitamins and foods containing them.
- Do not drink distilled liquors.
- Do not use a microwave oven.
WestonAPriceTraditionalDiets
- The diets of healthy primitive and nonindustrialized peoples contain no refined or denatured foods such as refined sugar or corn syrup; white flour; canned foods; pasteurized, homogenized, skim or low-fat milk; refined or hydrogenated vegetable oils; protein powders; artificial vitamins or toxic additives and colorings.
- All traditional cultures consume some sort of animal protein and fat from fish and other seafood; water and land fowl; land animals; eggs; milk and milk products; reptiles; and insects.
- Primitive diets contain at least four times the calcium and other minerals and TEN times the fat-soluble vitamins from animal fats (vitamin A, vitamin D and the Price Factor) as the average American diet.
- In all traditional cultures, some animal products are eaten raw.
- Primitive and traditional diets have a high food-enzyme content from raw dairy products, raw meat and fish; raw honey; tropical fruits; cold-pressed oils; wine and unpasteurized beer; and naturally preserved, lacto-fermented vegetables, fruits, beverages, meats and condiments.
- Seeds, grains and nuts are soaked, sprouted, fermented or naturally leavened in order to neutralize naturally occurring antinutrients in these foods, such as phytic acid, enzyme inhibitors, tannins and complex carbohydrates.
- Total fat content of traditional diets varies from 30% to 80% but only about 4% of calories come from polyunsaturated oils naturally occurring in grains, pulses, nuts, fish, animal fats and vegetables. The balance of fat calories is in the form of saturated and monounsaturated fatty acids.
- Traditional diets contain nearly equal amounts of omega-6 and omega-3 essential fatty acids.
- All primitive diets contain some salt.
- Traditional cultures consume animal bones, usually in the form of gelatin-rich bone broths. Traditional cultures make provisions for the health of future generations by providing special nutrient-rich foods for parents-to-be, pregnant women and growing children; by proper spacing of children; and by teaching the principles of right diet to the young.
Special Report prepared December 13, 2004 by Matti Anttila
PS: “Ernest Thompson Seton, an earnest student of the American Indian, summarizes the Indians’ motive as being ‘fundamentally spiritual, his measure of success is, How much service have I rendered to my people?’”
PPS: “Dr. Ernest A. Hooton of Harvard University: “I firmly believe that the health of humanity is at stake, and that, unless steps are taken to discover preventives of tooth infection and correctives of dental deformation, the course of human evolution will lead downward to extinction…The facts that we must face are, in brief, that human teeth and the human mouth have become, possibly under the influence of civilization, the foci of infections that undermine the entire bodily health of the species and that degenerative tendencies in evolution have manifested themselves in modern man to such an extent that our jaws are too small for the teeth which they are supposed to accommodate, and that, as a consequence, these teeth erupt to irregularly that their fundamental efficiency is often entirely or nearly destroyed.”
PPPS: An example of the ancient wisdom:
“…when the Indian kills a moose he opens it up and at the back of the moose just above the kidney there are what he described as two small balls in the fat. These he said the Indian would take and cut up into as many pieces as there were little and big Indians in the family and each one would eat his piece…also the walls of the second stomach. By eating these parts of the animal the Indians would keep free of scurvy, which is due to the lack of vitamin C.”

Bonus Report #4. Rev up Your Body’s Engine Using the Wisdom of the Ages.
What we put in our mouths is critical to our energy, our health and even our intelligence. Nourishing Traditions shows how to use the wisdom of the ages to balance your food input and regain the health and energy we were designed for.
SPECIAL REPORT: NOURISHING TRADITIONS
“Americans spend $800 Billion dollars yearly for medical services—yet we have little to show for this tremendous strain on our resources. Medical science has not even been able to lengthen our life span.
Fewer persons alive at 70 today survive until 90 than 40 years ago. (Italics mine!)…
Credit for today’s relatively long life span belongs to improved sanitation and the reduction of infant mortality.”
-Sally Fallon in the introduction to “Nourishing Traditions: The Cookbook That Challenges Politically Correct Nutrition and the Diet Dictocrats.”
“Nourishing Traditions” is essential reading for anyone who is passionate about living a full life, a life that is free of major ailments and a life that has the best chance of being a long, healthy and satisfying one.
If you were looking for health, where would you look?
Do you look at diseases, as the medical community is focused on?
Or would you go to places where people had superb health?
That was the direction dentist Dr. Weston Price took.
Much of Fallon and Enig’s research traces back to the work of Dr. Price, who traveled the world looking for tribes or cultures with perfect teeth.
He found 14 groups with almost perfect health. These ranged from isolated Irish and Swiss, Eskimos to Africans. No chronic disease, no dental decay and mental illness.
Further, they produced healthy children with ease, generation after generation.
Guess what else Dr. Price found? When these groups were exposed to the so called “civilized” diet of refined grains, canned foods, pasteurized milk and sugar, they got the same things we have:
*tooth decay
*infectious diseases
*degenerative illness and
*infertility.
Dr. Price’s conclusion: the western diet “spoils our God-given genetic inheritance of physical perfection and vibrant health.”
Not much of a surprise to many of us: we see it all around us and in ourselves.
Who amongst us has perfect teeth, for example?
Later research showed that these societies “allow grains, milk products and often vegetables, fruits and meats to ferment or pickle by a process called lacto-fermentation…unlike modern preservation methods, which deaden and denature our foods, lacto-fermentation makes nutrients in these foods more available and supplies the intestinal tract with health-promoting lactic acid and lactic-acid-producing bacteria.
Another technique found universally in ethnic cuisines is the use of bone broths, rich in gelatin as well as in calcium and other minerals…studies (on the beneficial effects of gelatin) are ignored even as traditional methods for making rich stocks are forgotten.”
Here is a summary of some other findings in the authors’ research:
FATS:
“..our choice of fats and oils is one of extreme importance. Most people…benefit from more fat in the diet rather than less.
But the fats we eat must be chosen with care. Avoid all processed foods containing newfangled hydrogenated fats and polyunsaturated oils.
Instead, use…extra virgin olive oil and small amounts of unrefined flax seed oil…coconut oil for baking…animal fats for occasional frying.
Eat egg yolks and other animal fats with the proteins to which they are attached…use as much good quality butter as you like…an essential food for you and your whole family.”
CARBOHYDRATES:
“Strict abstinence from refined sugar and very limited use of refined flour is good advice for everyone.”
“As the consumption of sugar has increased has increased, so have all the ‘civilized’ diseases.”
Sugar consumption has increased from 10 pounds per person per year in 1821 to 170 pounds today.
“Herein lies the root cause of the vast increase in degenerative diseases that plaque North America…
More plagues than heart disease can be laid at sugar’s door.
A survey of medical journals in the 1970’s produced findings implicating sugar as a causative factor in kidney disease, liver disease, shortened life span, increased desire for coffee and tobacco, atherosclerosis and coronary heart disease…hyperactivity, behavior problems, lack of concentration and violent tendencies.
Sugar consumption encourages the overgrowth of candida albicans, a systemic fungus in the digestive tract, causing it to spread to the respiratory system, tissues and organs.
Sugar consumption is positively associated with cancer in humans and test animals. Tumors are known to be enormous sugar absorbers.
…sugar consumption is the cause of bone loss and dental decay…sugar consumption causes tooth decay not because it promotes bacterial growth in the mouth, as most dentists believe, but because it alters the internal body chemistry.
We recommend the use of a variety of whole grains but with an important caveat.”
Whole grains contain phytic acid, which blocks the absorption of iron, calcium, magnesium, copper and zinc. They also contain enzyme inhibitors that can interfere with digestion.
“Traditional societies usually soak or ferment their grains before eating them, processes that neutralize phytates and enzyme inhibitors.”
Avoid breakfast cereals, they are even worse than refined sugar and white flour, according to the authors.
PROTEINS:
“All proteins are combinations of just 22 amino acids…” eight of which the body cannot make and must be included in the diet.
“Of particular importance to the health of the brain and nervous system are the sulphur containing amino acids—methionine, cysteine and cystine—found most plentifully in eggs and meat.
Protein is essential for normal growth.
Just as animal fats are our only source of vitamins A and D and other bodybuilding factors, so also animal protein is our only source of complete protein.
In order to obtain the best possible protein combination from vegetable sources, pulses and grains should be eaten together and combined with at least a small amount of animal protein. Most grain based cuisines instinctively incorporate this principle.”
On a personal note, I was a vegetarian for about 25 years, albeit not a strict one. I still had fish and chicken and, on holidays, turkey.
The well researched information in this book and in “The Metabolic Typing Diet” has changed me back to a meat eater.
The authors demolish every argument I have used and heard for vegetarianism!!!
“Vegetarians often claim that animal products shorten life span, but the most cursory look at long-lived ethnic groups proves that this is not the case.
Russians from the Caucasus Mountains, an area famous for longevity, eat lots of fatty meat and whole milk products.
Studies of Soviet Georgian populations show that those who have the most meat and fat in their diets live the longest. Inhabitants of Vilcabamba in Equador (sic), known for their longevity, consume a variety of animal foods including whole milk and fatty pork.
The long-lived people of Hunza consume animal protein in the form of high fat goat milk products. On the other hand, the vegetarian inhabitants of southern India have one of the shortest life spans in the world.
…(a vegetarian diet) leads to deficiencies in many important minerals as well. This is because a vegetarian diet lacks the fat soluble catalysts needed for mineral absorption.”
“Current wisdom dictates that Americans should at least reduce their consumption of red meats and dark meat of birds because these meats contain more saturated fat than fish or white poultry meat; but even this stricture is ill-advised…Red meat is rich in iron and zinc, both of which play important roles in the body’s use of essential fatty acids; and as we have seen, consumption of saturated fat poses no threat to our health.”
“The primitive tribes studied by Dr. Price especially valued certain high-vitamin products like organ meats, butter, fish eggs and shellfish for growing children and for parents of both sexes during the childbearing years. They also ate some animal food raw.
MILK & MILK PRODUCTS:
“The practice of fermenting or souring milk is found in almost all traditional groups that keep herds. This process partially breaks down lactose and predigests casein, which is one of the most difficult proteins for the body to digest.”
“The milk sold in your supermarket is bad for everybody, partly because the modern cow is a freak of nature…today’s Holsteins routinely give three or four times as much (milk as cows from a century ago)…selective breeding…high protein feeding…
hormones…soybean meal…another factor is pasteurization…
pasteurization destroys all the enzymes in milk…(that help)…the body assimilate all bodybuilding factors, including calcium. That is why those who drink pasteurized milk may suffer from osteoporosis.”
”Modern pasteurized milk…(prevents)…the absorption of vital nutrients and promoting the uptake of toxic substances. The result is allergies, chronic fatigue and a host of degenerative diseases.”
“If you cannot find good quality raw milk, you should limit your consumption of milk products to cultured milk, cultured buttermilk, whole milk yoghurt, butter, cream and raw cheeses—all of which are available in all states. Much imported cheese is raw—look for the words ‘milk’ or ‘fresh milk’ on the label—and of very high quality.”
ENZYMES:
“Dr. Howell formulated the following Enzyme Nutrition Axiom: The length of life is inversely proportional to the rate of exhaustion of the enzyme potential of an organism. The increased use of food enzymes promotes a decreased rate of exhaustion of the enzyme potential.”
“Almost all traditional societies incorporate raw, enzyme-rich foods into their cuisines—not only vegetable foods but also raw animal proteins and fats in the form of raw dairy foods, raw fish and raw muscle and organ meats.
These diets also traditionally include a certain amount of cultured or fermented foods, which have an enzyme content that is further enhanced by the fermenting and culturing process.”
Good sources: sauerkraut, pickled carrots, cucumbers and beets…”Cultured soybean products from Asia, such as natto and miso are another good source of food enzymes if these foods are eaten unheated.
While we should include a variety of raw foods in our diets, we need to recognize that there are no traditional diets composed exclusively of raw foods.
Even in the tropics, where fires are not needed for warmth, the inhabitants build a fire every day to cook their foods. Some nutrients are made more available through cooking and cooking also neutralizes naturally occurring toxins in plant foods.”
The authors also address vitamins, minerals, supplements, salt, spices, additives, beverages, alcoholism, food allergies and special diets.
PARTING WORDS:
“To make us healthy, our food must taste good; it must be digestible, and it must be eaten in peace. Even whole foods, properly prepared according to traditional methods, do us no good if we eat them with a grudge; they will not confer health on the man who does not forgive. It is the loving heart who will find, in the pages that follow, guidelines for providing an abundance of all the nutrients we need to live healthy, happy and productive lives.”
I commend this book highly for your reading, study, reflection and daily use as a cookbook.
Let me leave you with this quote from the New York Times:
“Here in the land of the Three Musketeers, the Gascony region of southwest France, goose and duck fat are slathered on bread instead of butter, the people snack on fried duck skin and eat twice as much foie gras as other Frenchmen, and fifty times as much as Americans.
It was no surprise when Dr. Serge Renaud, in a 10 year epidemiological study that included surveys of eating habits, concluded that Gascons eat a diet higher in saturated fat than any other group of people in the industrialized world…
But scientists crinkled a collective brow over Dr. Renaud’s related findings about this region, which produces much of the world’s foie gras, the fattened livers of ducks and geese.
‘The foie gras eaters of the Gers and Lot Departments in Southwestern France have the lowest rate of death from cardiovascular disease in the country,’ he said…The basic Gascon in his blue beret would not be surprised.
Standing in his barnyard Mr. Saint-Pe listened to Dr. Renaud’s findings as though he were being told the obvious. ‘The people in my family live to be ninety years old,’ he said. ‘We cook everything in duck fat. We have foie gras on Sunday. Everybody knows this is the long life diet.’”

Here is a radical suggestion: God made food that tastes good for a reason: we are supposed to eat the stuff that tastes good!
The caveat here is that we have become addicted to some foods and that throws us off balance so we can no longer differentiate what really tastes good and what is an addictive “tastes good.”
Sugar is the obvious example here. It is a substance that almost requires one to eat more and the more we eat, the more off balance we get.
“Nourishing Traditions” offers a solution of getting back to the basics of traditional ways of preparing and eating food that can bring us back to balance.
The result can be a much greater appreciation of our food, and the reclaiming of our birthright: a disease free and vibrantly healthy life.

PS: This is what Robert Atkins of the Atkins Diet had to say about this book:
“I have to recommend (it)…The first chapter of her book is so right on target that I feel a little guilty for taking her ideas…”
PPS: As a result of moving back to the traditional way or preparing food, I am fully expecting to get almost all of my nutrition from food, as contrasted with the expensive supplement habit I have picked up trying to fill in the gaps that our modern diet has. I am expecting to save a lot of money by not having to buy most of my current supplements. Supplements which often times are not absorbed fully anyway. The understanding here is that food needs to come in the form that nature provides, for nature provides food in that form for a reason. More and more, researchers are finding that the so called inactive ingredients are actually critical to the process of nourishing ourselves.
A simple example is acetylsalicylic acid, the so called active ingredient originally taken from white willow bark and the ingredient in aspirin.
Well, if you take aspirin, 90% of the time it causes bleeding in the gastro intestinal tract. But if you take white willow bark, which has acetylsalicylic acid in it, you do not get the bleeding. Nature provided the natural buffers in the white willow bark.
The same applies to Vitamin C. There is now evidence to indicate that there are problems with high consumption of Vitamin C. But, if you take it in natural form, the bioflavanoids in citrus skin work synergistically with the Vitamin C to provide a better antioxidant effect and prevent any problems associated with synthetically produced C.
So, another major reason to get this book and use the easy to use recipes is not only the pleasure in getting back into tastier, more fun and more nourishing food and traditions, but one may actually save a lot of money in supplements (not to mention drugs needed to heal ailments).

Bonus Report #5. How to Get What You Want and Want What You Have
Author John Gray says: “Whenever you are not getting what you need, you are always looking in the wrong direction. Material success can only make you happy if you are already happy. The power to get what you want comes from confidence, positive feeling, and desire. You have the power to change. No one else can do it for you.”
SPECIAL REPORT: How to Get What You Want and Want What You Have
Some wise words from the book by John Gray, author of MEN ARE FROM MARS, WOMEN ARE FROM VENUS:
“Whenever you are not getting what you need, you are always looking in the wrong direction.
Material success can only make you happy if you are already happy.
The power to get what you want comes from confidence, positive feeling, and desire.
You have the power to change. No one else can do it for you.”
That second one, as a side note, is one of the reasons I don’t bother with lottery tickets anymore. There is actually evidence that a multi million dollar win can ruin a person’s life.
There was a woman from Quebec, Canada who had that experience. She won millions, lost her husband, her family, her friends, all the money she had won and almost lost her life. She researched others who had won millions, I believe it was about 14 other multi million dollar lottery winners. Every single one had a similar experience.
Also, a documentary on other winners showed some similarities. Although, in the documentary, there were some winners who were having good lives, most of them had lost friends. One lent some thousands to a friend, who then would not return phone calls. The bottom line is; money did not solve all of their problems, it simply intensified their lives. So, when John Gray says material success can only make you happy if you are already happy, that is supported by the experience of lottery winners.
“The real challenge in life is not just getting what you want, but continuing to want what you have. Many people have learned how to get what they want, but then they no longer enjoy it. Whatever they get is never enough; they always feel as if they are missing something…There is always one more thing to disturb their peace of mind…
At the other end of the spectrum, there are those who are much more content with who they are, what they do, and how much they have, though they do not know how to get more of what they want. Their hearts are open to life, ye they are still not making their dreams come true…Most people fit somewhere between these two extremes…
A few small but significant changes in the way we think can pave the way to greater personal success…
Four Steps to Personal Success…
Step One: Set your intention…By acting in harmony with your soul’s desire, and not just the desires of your mind, heart and senses, you will be well prepared for both inner and outer successes…
Step Two: Get what you need…You must understand the ten different kinds of love and support that every person needs…if you are not getting certain love needs fulfilled, you cannot find your true self…
Step Three: Get what you want…Learn how to strengthen the power of your desires by acknowledging and transforming negative feelings and emotions.
Step Four: Remove the blocks to personal success. Become aware of the twelve common blocks that could be holding you back from having what you want…With this new ability, you will begin to experience that nothing outside yourself is holding you back…
Chapter 4: How to Get What You Need…
Love Vitamins
Just as the body needs water, air, food, vitamins, and minerals to stay healthy, the soul needs different kinds of love to grow and express itself fully through the mind, heart, and body…
THE TEN LOVE VITAMINS
1. Vitamin G1—Love and support from God.
2. Vitamin P1—Love and support from our parents.
3. Vitamin F—Love and support from family, friends and having fun.
4. Vitamin P2—Love and support from peers and others like us with similar goals.
5. Vitamin S—Love and support from ourselves.
6. Vitamin R—Love and support from intimate relationships, partnerships, and romance.
7. Vitamin D—Love and supporting someone who is dependent on us.
8. Vitamin C—Giving back to our communities.
9. Vitamin W—Giving back to the world.
10. Vitamin G2—Serving God.
A rich and fully satisfying life will be fuelled by each of these ten kinds of love and support. When you are dissatisfied in life (no inner success) or you are not getting what you want (no outer success), the basic reason is you are not getting what you need.”
The above structured way of looking at life is opening up a new vista for me. It organizes gives structure to integrating the spiritual, physical, mental and emotional aspects of my life. It seems like a lot of work initially. However, you are going to work regardless.
I happened across a PBS program with Gary Null last night. There was a 90 year old woman who was and is a rhythmic gymnast. Fifty two years ago, she competed in the Olympics. They showed her practising today and I was amazed. She was in skin tight leotards, had incredible flexibility and looked as good as any 50 year old that I know.
What she said was so profound. Gary Null had made the point that those who have health and live a long time continue to challenge themselves and are challenged by life. This 90 year old said all her friends who are still alive are spending all of their energy fighting diseases and afflictions, while being sick and miserable. She said you are going to expend the energy anyway, why not expend it to stay healthy, have energy and enjoy life.
Filling the Ten Love Tanks…
Love Tank One: Vitamin G1
The first love tank is love and support from God…meditation…
Love Tank Two: Vitamin P1
The second love tank is love and support from our parents…In a very practical sense, seeing counsellors or therapists is like hiring parents…
Love Tank Three: Vitamin F…
support from family friends, and fun…To keep this tank full, we need to nurture our old friendships, and sometimes we need to create new friends as well…friendship helps us to accept ourselves the way we are…
Love Tank four: Vitamin P2…
peer support…a club or support group of some kind. Having a favourite sports team or activity is another way of finding this support…If you are open to a particular religion, then participate in group activities. Sing together and pray together…
Love Tank Five: Vitamin S
Love tank five is self love…you have to make sure you come first…You must begin asking yourself what you want and then go for it…
Love Tank Six: Vitamin R…
relationships. partnerships, and romance…you need to make sure you are sharing yourself with someone. In some way, you depend on that person and that person depends on you…
Love Tank Seven: Vitamin D…
giving unconditional love to someone who is depending on you…and essential requirement of the soul…we need to take care of children and then later grandkids. If we don’t have children, then we should offer our services to others… a good replacement is having a pet or garden to look after…
Love Tank Eight: Vitamin C…
giving back to your community…
Love Tank Nine: Vitamin W…
an extension of love tank eight…a time to share with those of different backgrounds and traditions…a time to travel and see the world and share your light…
Love Tank Ten: Vitamin G2
Love tank ten is serving God…This is when we reach our full glory. This is when we can be in touch with our greatest powers and gifts. When we have learned to full all our love tanks, we can express each day to our full potential a this stage…Many people immediately age and get sick at this time, because they cannot meet the challenge. Their other tanks are too empty to fulfill this new requirement to give selflessly in service.”
The rest of the book is details on how to fill up those love tanks.

Bonus Report #6. Tap into Your Most Powerful Resource, Your Own Intuition
With all the distractions we have, many of us get disconnected from that intuition. This is a simple and easy-to-use system that takes moments a day.
(This is chapter 13 of my book The Zen of Joy.)
“Dr. Hew Len, the Ho’Oponopono guy, tells us that there are 50 million bits of information coming at us every second. The conscious mind can only take in a fraction of that, maybe 50 bits of information per second.
The conscious mind doesn’t stand a chance. We have been trying to operate in this world with both hands tied behind our backs. We attempt to make logical decisions and try to operate by consciously deciding on our course of action.
Trying to make decisions consciously is absolutely doomed to failure. We are operating in the dark. Never will we have all the information on which to base a decision. There are just too many variables, seen and unseen, for the conscious mind to take in, never mind sort out. It’s like a three-dimensional jigsaw puzzle that is constantly moving. More likely a four or five-dimensional puzzles in dimensions we don’t even know exist—all in constant motion.
What’s the answer? Live in the “now.” Dr. Hew Len says learn to listen to messages from the universal source of all, the energy that moves all of the universe. We can only do that by listening to intuition. We can only “intuit” messages coming in by being in the “now.” How can we do that? If you have been doing the protocols, the good news is, you are already doing it.
Protocols #9 is the Ho’Oponopono incantation: “I’m sorry. Please forgive me. Thank you. I love you.” By doing that and allowing the Inner Smile, you plug yourself into the “now.” Protocol #10 is meditation. You may find, as many of us have who meditate, that thoughts, feelings and/or ideas come to you when in meditation.
Protocol #13 is: Pay attention to those thoughts, feelings or ideas that come to you when you chant the incantation and when you meditate. You may want to write them down as soon as you are able. You may choose to carry a little notebook that fits into your pocket or purse so you can quickly make notes before you forget.
You may also choose to have a recorder with you in the car, if you drive. Often times, driving itself can put us into a “meditative” state and ideas, thoughts and inspiration can come to us. It is still legal to grab a recorder sitting on the seat beside you and speak your notes into it. You may also choose to have a pen and pad by your bedside or even a recorder and when ideas or inspiration hit in the middle of the night, you can scrawl some notes or speak into the recorder.
(Sometimes it can happen that those scrawled notes make no sense whatsoever in the morning. The inspiration felt so profound when it came. It may even have been earth shattering, game changing and/or paradigm shifting. But try as you may, you can’t see what those scrawled bits on the paper have to do with anything! When that happens, just say, “Oh, well,” smile and move on. Remember we are living in the present moment. One of the keys to that is the understanding that life is a cycle. The universe may give us other insights later. Nothing is lost!)
You may also choose to actually ask a question of your subconscious. With the understanding that the subconscious is plugged into the infinite wisdom of the universe, anything we ask it, it can answer. It does so by scanning, for want of better words, the infinite records of the universe. The records that are always there, but not open to the conscious mind. A great way to do this is:
Just before falling asleep, ask: “Dear God (Dear Universe, Dear Subconscious Mind … it doesn’t matter what you call it, just ask sincerely, according to your own religious or secular belief structure), I ask for and am willing to receive the answer to this question: (state the question). Thank for providing the answer for me. And it is done.”
Don’t be surprised (though you may be!) if you receive elegant solutions to some of the stickiest “problems” or situations in your life. It has happened for many others. It can happen for you too.
Your mission for this week, should you decide to accept: Say the Thankfulness Incantation twice a day. Best times may be first thing on waking and last thing before falling asleep.
Time Commitment: zero seconds because you can do it at odd times and at any time.
Protocol # Minimum Time Optimum Time
1 15 seconds x 4= 1 minute 15 seconds x 12= 3 minutes
2 45 seconds x 2= 1.5 minutes 1 minute x 2= 2 minutes
3 5 minute 15 minutes
4 4 & 6 seconds each 4 & 6 seconds each
5 5 mins. x 2 = 10 minutes 15 mins. x 2 = 30 minutes
7 1 minute 2 minutes (at 4 times an hour)
8 2 minutes 2 minutes
9 1 minute, twice daily=2 mins. 2 minutes
10 2.5 mins. x 2= 5 mins./day 5 minutes
11 zero zero
12 20 seconds x 2=40 seconds 20 seconds x 2=40 seconds.
Call it 1 min.
13 zero zero
Zero actual time as we are doing this while engaged in protocols # 9 and 10, or while driving. If you choose to ask a question before falling asleep, you were doing that anyway—falling asleep that is. Well, OK, so writing a few notes here and there may take a few moments. Want me to add a minute to each column for that? OK, you win.
13 1 minute 1 minute
Bare Bones Minimum Daily Time Commitment: 18.5 minutes a day. If you choose to optimize: Optimum Daily Time Commitment: 30 minutes a day. Now you are up to 30 minutes a day. See how easy that was to add new habits? Especially when you get the results of feeling good, of feeling happier or feeling joy. You may be finding by now that you have the ability to access that Inner Smile, and joy feeling that comes with it, at most any time. You may also find that there are times when it is more challenging to find that joy.
Times of great stress at work or perhaps it is family “stuff” that we all have plug us into bad feelings. At those times, it is good to remember our families are our clearest mirror. Family members are the ones who can “push our buttons” better than anyone else. They know where those buttons are! What’s the answer? Just keep going. If we take Dr. Hew Len’s wisdom and recognize that whenever we see something in someone else, all we are seeing is a reflection of “stuff” inside of us that we have not cleared yet. We can choose to react, or we can choose to chant the incantation internally even stronger.
Put this manual down now and stop reading. Take at least one day to one week with this exercise. See ya next time. ”
